I don't think sib does anything with gluten free. But sib does a lot of fly by the seat of pants cooking and substitutions -- honey and such for sugars - and of course up in MI, he uses beet sugar not cane sugar. That is something I want to look at to see what differences in structure (if any) between beet and cane sugar. Mostly, sib does things like conversions of old recipes such as the chocolate cheese cake bars that were made using Pillsbury Frosting Mix - you know -- the stuff from before they came out with premade canned stuff? The dry mix - had to be one that you had to add butter. Sib cooks a lot w/ venison and other wildlife and stuff from the garden.
